Hello Friends! Welcome to Wednesday again!
How in the heck do these weeks go so fast!? January is almost over. Say whaaaat!?
So…a couple of weeks ago, I wasn’t feeling very well and thought that I was never going to kick what I had picked up. Last week, I visited the doc, I was put on meds, and all was well with the world.
Then, yesterday happened.
My sore throat is back and, clearly, it’s trying to show me who is boss! I feel like this isn’t just any normal sore throat. It’s trying to take over my entire head…my ears, my teeth, my neck. It means business and I’m not happy that it decided to show up. I’m also sad right now that swallowing in mandatory…because it is pretty much the worst pain I’ve experienced in long time. I’m hoping that it’s such some residual sinus stuff that’s making my throat so uncomfortable rather than another bug.
**Fingers crossed**
Anyway. Enough about bugs and sickness. I feel like it’s all I talk about anymore. Let’s move onto the food that I’ll be sharing with you all today.
I usually share an entire day of food, however, yesterday, I had some soup and water and tea and then I had some more soup and water and tea. I didn’t think that would wow you, so I decided to share some food that I have eaten in the past couple of weeks that never made it onto the blog.
First up! A chocolate-chip Clif bar. I love these for a quick snack or a pre-breakfast in the car during my hour-long drive into work.
Next up! An omelet made with love from my grandma. She threw in red and orange bell peppers, mushrooms, and cheese. Yum!
(Who else’s parents/grandparents have these plates!?)
For a snack, I recently found these rice chips. I am not exaggerating when I say they were the best.things.ever. I could have eaten bag after bag after bag….
Lee and I went out to dinner a couple of days ago and for an appetizer we got baked mozzarella fondue with bread. Um…maybe I exaggerated about saying those rice chips were the best.things.ever because this fondue was the best.thing.ever.
No lie.
After I buried myself in cheese, I buried myself in seafood. Seafood Alfredo to be exact. This pasta was filled with shrimp, scallops, and mussels. SO good!
Finally…let’s balance out that creamy and fattening alfredo sauce with a salad that totally rocked my world. Greens, green peppers, tomatoes, a mixture of olives, croutons, and cheddar and feta cheeses. It was all topped with some Greek vinaigrette dressing.
