#WIAW Delicious Eats & #TIU

Posted May 03 2012 8:07am
Hello my lovelies! Yes, I’m here again! I know it’s been forever since I posted, and unfortunately I think it will be a bit sporadic for the next month simply because of a very busy schedule. But I can’t wait to return to a more regular blogging life. I really miss it… Since WIAW posts are such an easy easy way to reconnect and to remind you to live a healthy and active lifestyle in midst of a crazy world, here I am!

After doing about 10min of sun salutations to wake my body up (and to give the coffee maker time to brew coffee!), I welcomed the day with an old time favorite – fried eggs! Eaten on a toasted whole wheat English muffin. Mmm runny yolks!

Since my morning appetite is guaranteed to be through the roof pretty much every day no matter what I have for breakfast, a morning snack was in order… I made these oatmeal protein bars (original recipe by Sarah here ) over the weekend, and have been nibbling on them when hunger strikes. Topped with a spoonful of my dear new favorite Barney Butter. The crunchy, the chewy, the creamy… Oh happiness!

{LUNCH 12:30pm}

Lunch was phenomenal… Homemade pelmeni with turkey for course número uno. Cooked buckwheat with pan roasted Brussels sprouts for course número dos. Yup, I ate TEN Brussels sprouts… I guess that’s my “I never limit my veggies rule”.

And for a midday snack I finally got a treat I’ve impatiently awaited for months! Chobani Blood Orange Greek yogurt! At last! It was everything I had hoped it would be and now I finally understand why bloggers and friends have been obsessing over it. Sweet. Tangy. Creamy. Oh yes.

And then I set out on a trip to the gym because I just couldn’t sit any more. And let me tell you. It was intense. Here is a recap (you can also check out the Fitness Log tab at the top for my daily exercise recaps).

  • Treadmill HIIT workout: I alternated between levels 9 and 7 every minute for 10 min. Followed by a 5 min cooldown at levels 6 and 7.
  • Did Tone It Up “ Bikini Bootcamp ” routine for 5 reps using the handy dandy Tabata timer iPhone App.
  • Finished it off with Tone It Up “ Under The Sea ” routine.
  • And lots of stretching of course. Can you say, Aaahhh

Dinner time! A huge salad topped with tzatziki in placed of salad dressing (I think that’s my Russian roots shining through… We used to put sour cream in our salads.) Pan roasted salmon and a boiled potato. A sweet treat (not pictured) included my very favorite dark chocolate of ALL times – Lindt Dark Chocolate with Sea Salt. The sweet + salty combination is my weakness.

And that’s a wrap!

Please please please leave a little update in the comments section on how you’ve been! I miss hearing from you!

❤ Veronica
