On Sunday morning my husband, Blake, woke up wanting some pancakes. Of course I had to find a healthy recipe. I found a recipe on fitsugar.com and changed it up just a tad. This ended up being quick, easy, and yummy.
Whole Wheat Greek Yogurt Pancakes
(approx. 149 per pancake)
1 cup whole wheat flour
1 1/2 tsp truvia baking blend
3 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/2 cup vanilla greek yogurt
1/2 cup 1% milk
4 tbsp vegetable oil
2 large eggs
In a small bowl mix together the dry ingredients and set aside.
Whisk together milk, greek yogurt, oil and eggs. Add the dry ingredients and mix until it is well blended. If you need to, add more milk until the batter is to your liking.
Spray a preheated skillet with cooking spray and pour about 1/4 cup of batter per pancake.
Cook for about 2mins for each side of the pancakes.
I ate mine with sugar-free syrup and fresh raspberries. Mmmm
