Chocolate Banana: substitute the coffee for more milk and add 1 mashed, ripe banana and 1/2c walnuts for chocolate banana muffins. Chocolate Caramel: subtract the chocolate chips and add 1/2c diced caramel candy….you know, the individually wrapped squares you buy in a bag. Dirty Chocolate Chai: Substitute milk with vanilla soy milk. Add 1/2tsp cinnamon, 1/4tsp nutmeg, and a pinch of allspice

I am a chocolate addict for sure. And with whole wheat, flax, and lower amounts of sugar, I get a filling chocolate fix, guilt free! These are great for breakfast or a quick snack.I’ve been meaning to post this recipe for awhile. I like to refer to it as a whatever-you-have-in-your-cabinet recipe. For example, I didn’t use eggs this time because I was out! But, flax is a good binding ingredient. I also threw in a little bit of walnuts in today’s batch….as well as Frangelico (hazelnut liquor). I just went crazy!
2 eggs
1/2c oil
1/4c sugar
1/4c brown sugar
1tsp vanilla
1tsp Kahlua (optional)
3/4c flour
1/4c ground flax
1/2c oatmeal
6 tablespoons sifted NATURAL* cocoa powder (I use Ghiradelli or Trader Joe’s)
2tsp baking powder
1/4tsp salt
1/3c milk and
1/3c coffee
1/4c chocolate chips (preferably MINI, semisweet. milk chocolate chips work too)
Mix oil, sugars, eggs, vanilla, and kahlua. Mix dry (except oatmeal) in a separate bowl. Mix dry into wet and add the milk, coffee, oatmeal, and chocolate chips.
Bake for 17-20min @ 350
