White Chicken Chili, in the Slow-Cooker of course!

While I was at home I had my mom's White Chicken Chili. I typically make it every fall and a couple of times throughout the winter but somehow this year I haven't. Maybe it's because I have been busy making different types of squash every weekend. I had some extra time on this gloomy day and thought it would be just perfect. If you haven't had white chili, it's much less acidic since there are no tomatoes (unless you add salsa at the end as a topping), it has a lighter flavoring, and this recipe is quite healthy! It is still hearty but without the overwhelming flavors of regular chili. My favorite part is the white shoepeg corn, it has a sweeter flavor than yellow corn. Sometimes it can be difficult to find but it is what makes this chili so delicious.
Mom's White Chicken Chili Recipe Makes approximately 6 servings Ingredients: 1 tsp Lemon Pepper 2 tsp Cumin 2 chopped cloves of Garlic 4 boneless skinless chicken breast halves 1 cup chopped White Onion 2 (8 oz) cans White Shoepeg Corn (drained) 2 (4 oz) cans chopped Mild Green Chiles (drained) Juice of 1 Lime 2 (14 oz) cans Great Northern Beans or White Cannellini Beans (undrained) Tortilla Chips of your choice Salsa Shredded Monterey Jack Cheese Sliced Avocado
DirectionsIn a large sauce-pan, combine 2 1/2 cups water with lemon pepper and 1 tsp cumin. Bring to a boil. Add the chicken breast halves and return to a boil. Reduce the heat to low and simmer for 20 to 30 minutes, or until the chicken is tender. Remove the chicken from the pan, it should shred very easily. In a medium saute pan, spray with olive oil and saute onion, until tender and add garlic for 2-3 minutes. Place the chicken and the broth into the slow cooker, add the garlic, onion, corn, chiles, other tsp of cumin, beans and lime juice. Turn the slow-cooker on low heat for 5 hours.
To serve, place cheese and crushed tortilla chips on the bottom of the bowl. Pour chili over cheese and chips and stir (the cheese and chips will get melty). Top with salsa and sliced avocado. ENJOY!
