I recently asked the question, “What confuses you most about gluten-free eating?” Some of you wondered about the difference between wheat-free and gluten-free.

Others were curious about wheat’s pro-inflammatory properties for autoimmune illnesses. Someone else wanted to know if going gluten-free would enhance their running performance. Then there were those whom indicated gluten-free eating is nothing more than a craze.
