What Up Wednesday?!

Haha I had to do it! Love that commercial!

If ya don’t know by now…..IT’S WHAT I ATE WEDNESDAY!

But this post isn’t just gonna cover eats….no, no. It’s gonna cover what I did, what I made, and anything other “what I’s”!

Get ready to partaaaay .

What I ate:

breakfasttoday

{fried egg with spinach and salsa+chocolate green monster with shredded wheat, puffs, raisins, walnuts, and ezekiel cereal}

lunchtoday

{tuna, feta, apple salad with balsamic+toast with laughing cow and jam, apple slices and carrots with sunflower seed butter}

snackyerpp

{blueberry larabar, corn bread muffin tops, and an orange}

dinnertoday

{string cheese and woven wheats, pesto pasta with tilapia and broccoli, and lentil soup}

snbackrtoday

{peanut butter and jelly topped wasa’s + blueberries, apple, grapes, dried apricots, and protein powder in almond milk}

That pesto in the my dinner pick was FABULOUS! Which leads me to my next part of this Wednesday extravaganza!

What I made:

High Protein Pesto Dip

Adapted from Angela’s High Protein Oil free Pesto

  • 1 cup tightly packed fresh basil leaves (don’t be shy- really pack it in!)
  • 2 garlic cloves
  • 1 15-oz can navy
  • 1 tbsp water
  • 3 tbsp nutritional yeast
  • 2 fresh lemon juice
  • 3/4 cup steamed kale
  • 1 tbsp walnut oil

Add garlic clove to processor and process until finely chopped. Now add in the rest of the ingredients to taste and process until smooth, scraping down the bowl as necessary.

DEEElicious! I love that this has so much added protein from the beans and the addition of kale really amps up the nutrition (+ it makes it such a pretty green color!).

What I did:

My mom and I went to a LAMO yoga/pilates class tonight. The instructor didn’t really know what he was doing and I actually feel like I could’ve taught a better class…LOL! Definitely not worth the money….but oh well. I guess its good to know for next time though!

I hit up google! I type in fitness pics or something similar and seeing all the people doing fun, active stuff and looking awesome while doing it makes me want to join in on all the fun! Works like a charm!!
