I don’t know about you, but weekends are always a little different for me on the food-front. Without the usual 8-to-5 work schedule, I’ve got more time to meet up with friends, more time to push myself with a challenging workout, and more time to get creative in the kitchen!
Hence, why I thought it might be fun to add a “What I Ate” weekend edition into the mix.
Here we go!
After a brutal 60-minute Bar Method workout, I needed hydration ASAP! In this particular green juice: cucumber, romaine, kale, carrots and lemon.
Which didn’t hold me over for long.
Soon after, I dove into an Almond-flour Chocolate Chip Scone that I stole from my mom’s house for my trip home!
Holy cow, these are good. She got the recipe from The Gluten-Free Almond Flour Cookbook , used honey to sweeten them, and added chocolate chips. I loved how these nutritionally-dense scones satisfied both my taste buds and my appetite!
Followed by a few fresh dates. A highly underrated dessert.
I attempted a new vegan brownie recipe, and turned the leftover batter into cookies– that didn’t really hold together well. They tasted amazing, though, and a few samples definitely made it into my mouth.
Large salad (eaten out of a classy mixing bowl) topped with tomatoes, bell peppers, and shredded raw goat cheddar, along with a few extra slices on the side. Like I’ve mentioned before, I could eat this salad every night.
And there’s always room for some dark chocolate at the end of my day… always. This bar is my new favorite!
