It’s my last week of traveling, before my doctor cuts me off from flying. It’s been a pretty exhausting couple of weeks, so I’m looking forward to being home for a long stretch of time!
Below you’ll find another peek at one of my travel days.
This fruit & yogurt combo has become my favorite take-along breakfast during this business trip. I snacked on a large bag of strawberries (about 3/4 of a pint) throughout the morning, then when I felt hungry later, I moved onto the goat’s milk yogurt.
I dined out for lunch, and ordered a delicious salad topped with grilled asparagus, tomatoes, feta, and wild-caught Alaskan salmon, with a balsamic dressing on the side. I didn’t think it looked very big at first, but by the end, I was totally stuffed.
I tend to get hungry right around the end of my work day lately, so I’ve been keeping a snack bag of raw almonds in my purse. I forgot to take a picture, but I’d guess I snacked on about a 1/4 cup of them.
I’m often asked how I eat in social/family gathering situations, so this is a perfect example. Since I was a vegetarian for years, my family is already pretty used to me eating differently from the rest, but I do usually try some of the side dishes that my mom or grandma prepares.
On this particular evening, my grandma prepared a pork tenderloin as the main course, along with a broccoli and brown rice casserole and some marinated fresh tomatoes. While she sliced up the main dish, I threw together a large salad for my own main course– featuring mixed greens, shredded carrots, tomatoes, raw goat cheddar and balsamic dressing. Then I could sit down with my family and enjoy my salad, along with a portion of the broccoli and rice dish and marinated tomatoes. It was all delicious!
I’ve been so exhausted from my long work days, that I’d rather go to sleep early than stay up for an evening treat! (And that’s saying something, considering my usual sweet tooth.) It’s amazing how much sleep I need–> 8 hours doesn’t feel like nearly enough. I guess this is my body’s way of gearing up for the future…
