Happy Wednesday!

Well, it has taken me 3 1/2 years, but I am partaking in my very first What I Ate Wednesday today.

Being that it is only mid-day, this is obviously what I ate yesterday, but you get the picture. :)

What I ate Wednesday


1.  For breakfast, I had a protein pancake topped with organic pure maple syrup, strawberries, and blueberries.  I also had some decaf coffee with almond milk and cinnamon and a huge glass of water with lemon.

2.  Lunch was a wrap on a whole grain tortilla and filled with grilled chicken, avocado, tomato, onion, and Annie’s Organic honey mustard.  I also had some pineapple and more lemon water.

3.  I had a dark chocolate mocha almond KIND bar as a snack along with some peppermint tea.

4.  For dinner, MT and I had pizza.  I made mine “dairy intolerance friendly” by using Daiya mozzarella shreds on a whole wheat tortilla with tomato sauce, garlic salt, zucchini, red onion, and banana peppers.  I also had a small spinach salad on the side (not pictured) because I felt like I needed more veggies.  I also had water…and a small glass of red wine.

5.  I always have a snack after dinner unless I am really stuffed, so I had a bowl of Half Naked popcorn.  I added some coconut oil to it just for something extra.

Throughout the day, I filled my Bubba mug over and over and had  some coconut water and a strawberry flavored Zevia.  Oh and I also snacked on some grapes while I was making dinner.

  1. Whoop for first WIAW!! Ok, that two posts with pizza now! I think I know what I need to make for dinner tonight!! I love me some popcorn. I’ll probably be having that after dinner tonight too! haha

    I am SUCH a popcorn addict! We’re having pizza for dinner tonight…again. I cannot get enough of the Daiya cheese. Life changing for someone who cannot eat dairy! Have a great weekend. :)
