This week’s recipe provides a simple way to add a tropical flare to your summer cuisine. The banana and mango compliment one another, so neither are too overpowering, while the cinnamon adds to the island appeal. Best of all it is cool and refreshing after little prep – just make sure to buy your mango in advance and allow it to ripen.
Mango Nana Pudding is a raw recipe with its plentiful nutrients in tact. It is has essentially no saturated fat, cholesterol, and sodium. The mango includes a good source of dietary fiber, vitamins B6, A, and C resulting in a beautiful natural orange shade – no food coloring here!
Feel free to experiment with additional ingredients such as macadamia nuts, pineapple tidbits, or coconut sprinkled on top. Once you do, I would love to hear your comments.
