This weekend hasn’t gone as planned food wise. With all of the studying I’ve been doing and preparations for christmas, the days have flown by. Before we knew it, it was dinner time and nothing was prepared. We ended up eating out the past few nights at some yummy restaurants. However, I’m more than ready for a dinner at home and have decided to plan some super quick and easy meals for this week since the first half consists of finals and the second half consists of last minute christmas shopping. I have lots to update you all on this week – elf4health week 2 and 3, my 8 mile treadmillrun, a yummy salad dressing recipe, and what’s going on in the next few months – but, lets get into meals and workouts for the week first!

Tuesday: leftovers (night class final)
Wednesday: BBQ Chicken Sweet Potato Skins and leftover veggies
Thursday: Grilled Chicken or pork with Butternut squash quinoa gratin
Friday: wing it/leftovers
Saturday: Family Christmas Eve Fish Dinner
Sunday: wing it/leftovers/out
Workouts
Monday: 60 minutes Yoga
Tuesday: 6 mile speed work run (tempo?) and a leg workout
Wednesday: 30 minutes bike and strength workout with Jess
Thursday: 5 mile hill run and bootcamp
Friday: strength workout
Saturday: 9 mile run
Sunday: OFF
Like always, my plans are tentative. Who knows what life brings you as the week goes on, but having a plan helps you stay organized along the way
