Remember how tired I was last week and how much I said I needed a restful weekend?
I haven’t felt this relaxed in weeks. It’s been a good mix of pleasure + business as well. I finally added a recipe page to the site! It’s not fancy but at least now you can see all the things I’ve posted.
I started off this weekend with a bang Saturday morning and knocked out a 6 mile run in 62 minutes! I was SO ticked I didn’t come in under 60 minutes but that’s my goal now for next weekend. As soon as I got back to the house I treated myself to trying a new Vega shake flavor. It was yummy but I slightly prefer the Vanilla Chai.
That night I finally had the chance to check out a new restaurant that opened up in town recently, The East Hill Yard . I coerced a friend into joining me there and I loved it. They have a ton of indoor and outdoor seating and a stage for live music on the weekends. It’s in this massive brick building that used to be a Hospital so the mood is phenomenal. I actually went there a few times years ago when it was a different restaurant an am so happy something new is in the space! The pictures I snapped aren’t great because of the low lighting but you get the gist:
I ordered their Vegan Spring Salad and my friend got some sort of sandwich (which he said was great). The salad was huge and it had vegan cheese on it which I had never tried before. It was delicious and I loved the balsamic they used (and didn’t completely drench the salad in which I can’t stand). I had totally bizarro dreams that night though and I’m blaming it on the faux-cheese.
Sunday morning I woke up, did some ab work, and worked on the site for a few hours. Later on that afternoon I felt like getting out of the house and stretching out my legs from my run Saturday and ended up going on a 4.5 mile walk down to the water. It was such a gorgeous day out!
When I got home my feet were killing me so I laid down and read for a bit. Of course I was hungry for dinner by 4 p.m. or something crazy so I threw a faux sausage patty in with some leftover spaghetti squash and Italian Seasoning. Low calorie, high protein deliciousness.
In other random news:
My Mom was on a texting binge Friday night and kept sending me the most ridiculous jokes.
I’ve been staring at these gorgeous flowers all weekend (and I think Salem’s getting jealous – he totally photobombed that second picture)
Finally, this blew my mind:
It is wonderful having today off from work but I’ve still got a lot on the agenda. I’m headed into Fort Walton Beach for a few hours to shoot some videos for the site! They will be exercise related and have to do with my first giveaway that I’ll be hosting here on Wednesday! I’ve got a few random errands to run when I get back into town then I’ll probably be cooking for about 4 hours. Seriously. Here’s what’s on the menu for the week (all of which I’ll make tomorrow so I can reheat for quick weekday meals!)
- Nicole’s Spinach and Artichoke Stuffed Portobellos
- Roasted Cauliflower and Tahini Salad
- Seriously Good Spinach Lentil Soup
- Broccoli and Cheddar Crustless Cupcake Quiches (recipe coming soon!)
Finally, I’ll leave you with this amazing inspiration to start off your week….so adorable… What did everyone else get into this weekend? Can you believe Thanksgiving is only TWO weeks away!?
