Happy Monday Bloggies!
I can’t believe how time is flying by. My weekend home was a blur, and, come to mention it, so was the week that preceded it. Can you believe I’m already writing my second weekend recap? It feels like S☀S has been around forever, but it also feels like I just pressed “publish” for the first time.
I’ll kick off with the weekend eats that you didn’t get a chance to see as I was pretty ‘busy’ relaxing with my parents while I was home. From left to right: Surprise salmon, Eggplant Bharta, Sushi & a Tomato/Potato Bake
Surprise salmon? Let me explain. It boils down to Arc being a big sweetie and a big tease. On Thursday night before I left for my parents’, I was going to go over and visit Arc for awhile as I wouldn’t be seeing him that weekend. Unfortunately, I got delayed by a meeting and dinner plans of cooking together fell apart. I called him (sulkily) to tell him that he should just eat without me, and we could play catch up later, but he wouldn’t hear it.
“I’ll cook you dinner,” he said, then, getting excited, added: “I know exactly what I’m making. It’s your favorite. I’m going to fry something, then cover it with grease, then fry it AGAIN.
But what are you ma-
I hung up, dumbfounded and slightly concerned. An hour later I arrived home only to find that Arc had made one of my favorite meals: herb-baked salmon with slightly-underdone (the way we like ‘em) mushrooms. There wasn’t a double down in sight, thank goodness. He knows me after all ;) The surest way to my heart is through a surprise like that one. I was so touched! It’s the little things, people.
My other weekend eats (other than what you read about earlier) were pretty standard. Sushi-like sushi, delicious Indian and a tomato/potato bake sans-cheese that my mom always makes. It’s scrumptious and I have the recipe with some modifications, so stay tuned for it. I’ll make it this week because there’s no way I’ll be able to go much longer without having it again ;) I forgot how much I love it!
What is your favorite home-cooked meal? Is there something that your boyfriend/parents/friends, etc, know to make for you?
After all of those meals out, boyfriend surprises and mama’s home cookin’ it was almost weird to come home and cook for myself again ;) I decided to rock one of my favorite, easy meals. It tastes like comfort food, but it’s so good for you you could have it every single day for lunch or dinner. To begin, I’d like to introduce you to two good friends of mine. Meet Mr and Mrs Spaghetti Squash:
For the record it was blindingly sunny in my apartment; my ingredients got to star in a sunset photoshoot. It was almost as fun to photograph this particular meal as it was to eat it.
… Almost ;)

This is a wonderful meal but note, it doesn’t reheat well as the ‘spaghetti’ strands break down. It still tastes amazing, but it’s more like cheesy marinara mush at that point ;)
