Warming Harvest Soup

I woke up this morning to rain!! It’s hard to believe that it is the 21st of September (a week till my golden bday!!) and this is the first rain we have had in a loooong time! In honor of the arrival of fall, it’s time to make some soup!


½ pumpkin, cubed (or any other squash. I used butternut)

1 carrot, sliced

2 sticks celery, sliced

1 onion, chopped

1 sweet potato, chopped (optional)

4 cloves garlic, minced (try 8 cloves roasted for a more flavorful, mild taste)

Salt/Pepper to taste

2 tablespoons olive/coconut oil

1 tablespoon coriander or chives

4 cups vegetable or bone broth


In large pot, add oil and chopped onion. Allow to sauté for about 8 minutes, until translucent. Add in garlic and cook for another minute.

Add in carrot, celery, potato and cook 3 minutes.

Add in broth and bring to a boil. Reduce heat and simmer for 20-30 minutes, until potato is tender. Add seasonings.

Transfer to food processor and blend until smooth. Garnish with toasted pumpkin seeds or fresh chives.
