Vegetarian Recipe: Organic Nectarine Spinach Salba Salad

Goodies Needed

  • Baby Spinach (organic)
  • Fresh Nectarines (organic)

(Depending on season you can substitute in any plums or peaches)

  • Salba Seeds (organic)

* Quantities depend on number of people you are serving and portion sizes

Preparation Steps

  • Rinse the baby spinach leaves (if not pre-washed) and remove excess water using salad spinner
  • Cut up the spinach leaves into bite size pieces
  • Rinse the nectarines and cut up into small chunks
  • Toss the nectarines with the spinach in a bowl
  • Sprinkle each personal salad with 2 tablespoons of Salba seeds
  • This is a super simple, delicious and super nutritious salad!
