Vegan Soy Chorizo and Veggie Lentils Recipe

Excuse you – we’re vacationing over here!

There’s definitely been a lot of relaxation going on here in the Miller household now that the gang’s all here!

(Minus Nick until Friday because he just started his new job.)

Swim Time

This morning, I decided to take advantage of the local public pool to get my swim on! It’s been over a year since I’ve swum laps so I made sure to take time to work on my form and get back into my groove.

I was pleasantly surprised to find that the 50 meter long course lanes were open and I was able to have a lane to myself. Yey!

Here’s what I did:

  • 1000 meters
  • 5 x 100 meters stroke drills with ~15 seconds rest
  • 500 meters
  • 200 meters cool down

I felt great overall but I really need to keep continue working on my stroke/form before getting back into speed work.

 

Jonathan’s Vegan Soy Chorizo and Veggie Lentils Recipe

It probably won’t come as too much of a surprise but my family LOVES to cook and eat together. Fortunately, we also all love veggies and plant centered meals. To start our week of delicious veggieful meals, Jonathan took the lead last night and cooked a delicious entree using one of my favorite ingredients: Trader Joe’s Soy Chorizo!

He combined the flavorful chorizo with a mix of sauteed veggies, hearty lentils, and a touch of water.

These Vegan Soy Chorizo and Veggie Lentils are simply scrumptious! I’m so glad we made a double recipe so that we have plenty of leftovers for lunch today! :D

 

Jonathan’s Vegan Soy Chorizo and Veggie Lentils Recipe

Makes 6 Servings

Ingredients

  • 1 tsbp olive oil
  • 1 yellow or white onion, chopped
  • 2 carrots, chopped
  • 3 stalks celery, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, chopped
  • 1 package Trader Joe’s Soy Chorizo, removed from casing (or similar product)
  • 2 1/5 cups cooked French lentils (we used 1 package of Trader Joe’s steamed lentils)
  • 1 cup water (as needed to achieve desired consistency)

Directions

  1. Preheat a large pan over medium heat for 3 minutes.
  2. Add the oil, carrots, celery, onion, and bell pepper to the pan and cook for 5 minutes stirring frequently.
  3. Add the garlic and cook for 2 minutes stirring frequently.
  4. Crumble the soy chorizo into the pan, add the lentils and stir.
  5. Heat through and add water as desired.
  6. Serve with cooked, pita bread, and/or salad and enjoy!
