Vegan Ryan Gosling

Whew! I’m going to apologize in advance for my delirious state of mind. I’m officially back from 10 hours of class and schoolwork and…well…let’s just say my brain is sore. Onto the day!

Workout

This morning, I awoke rather groggy. Even more of a reason to fit in a quality workout, right? To wake up my groggy self, I began with a 30-minute interval cardio session on the treadmill. I alternated between a 3 minute brisk jog, 2 minute run and 1 minute walk. It looked like this:

Nothing like some heart-pumping cardio to start your day! With the endorphins flowing, I headed into one of the group exercise rooms to complete three circuits of the Tone It Up Bikini Strap Workout . I loved the burn from the tricep push-up to the row and back extension. Whew!

Breakfast/Lunch

After the gym, I grabbed a coffee at the commuter cafe and headed back to my dorm to assemble breakfast, which was an unpictured yet totally delicious bowl of Vega protein pudding oats ! I munched on that along with a super fresh Fuji apple, my favorite kind of apple! I was in class from 8:30 to 1:30, at which point Kristin and I headed to the cafeteria to enjoy a much-needed lunch break.

The stuff that looks like dog food is actually jalapeno curried eggplant and it was fanatastic! I also had a salad with hummus and a generous drizzle of balsamic dressing. Mmm mmm good! The remainder of the day was spent in class and doing a group project. I won’t bore you with the details. Let’s skip to dinner, shall we?

Dinner

Tonight’s meal was semi-homemade. I had the last Tone It Up black bean burger, served atop  garden lites’ zucchini portabella side dish. 

Don’t you love when random meals come out so tasty? This definitely hit the spot. I really enjoyed the flavor of the zucchini portabella. It’s rare that I actually say “Mmm!” when tasting a frozen vegetable product, too. I’ll definitely be purchasing it again!

While it is true that I spend time defending my lifestyle and educating others on its nutritional benefits, I also enjoy a good vegan joke! In light of my delirious state of mind, you can imagine my sheer excitement when I came across this site . Click that. Now.

You read correct – it is a blog called Vegan Ryan Gosling; a.k.a. three words that should always be used in the same sentence. This blog is solely dedicated to photos of Ryan Gosling and hysterical, accompanying vegan captions. All of the captions start with “Hey girl.” Perfect.

I thought I would keep the air light tonight and share with you a few of my favorites!
