Vegan Pumpkin Ice Cream

Hey, Lovah’s!

Are you sick of my pumpkin recipes yet?? If so…deal with it Just kidding ;-) …Gosh, can’t you take a joke?

I had a GINORMOUS can of Libby’s pumpkin leftover in the fridge, thus all the pumpkin hype these past couple weeks.

When I felt a little snacky and in need of something sweet on Saturday afternoon….the last bit of my pumpkin stored in the fridge got put to use!

ingredients:

-2 frozen bananas [freeze in chunks]

-2 1/2 TBSP pureed pumpkin

-2 TBSP almond butter [I use raw unsalted]

-1 teaspoon pumpkin pie spice [to make see note]

-1 teaspoon vanilla extract

-few splashes of almond milk [or dairy free milk of choice]

-handful of chopped pecans

directions:

To make pumpkin pie spice combine 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg and 1/8 teaspoon allspice.

Layer the bananas at the bottom of your of vitamix or food processor. Add remaining ingredients excluding the pecans and almond milk. Blend while slowly adding a splash or two of almond milk to get it going…but not too much that it ends up like a milkshake. You want it to be an ice-cream consistency. Top with pecans and enjoy!

How was everyone’s weekend??

Ella and I joined my sister in laws, Z-Man, Courtney and Ella’s future boyfriend at the Walk for Wishes yesterday. Yes, Ella made me carry her the entire time. Half of the time I was carrying her and maneuvering the stroller until I made my sister in law take it. Spoiled lil’ peanut. It was only a 2 mile fun walk…but she made it more of a workout. Like carrying a 12 and 1/2 pound medicine ball on your arm for 2 miles.

We were cheering on the Phillies all weekend too!! Post season baseball in October is big around these parts!

Ella was really into the game…
