Vegan Pizza on a Quinoa Flax Crust

Edited to add: this post was meant for this morning, but silly me forgot to press publish! I’m not going to change the time frame references—I mean, it’s the food that it’s important anyway. Right?

I usually love my Tuesdays because I get home at a decent time—4 PM. Well, that wasn’t the case yesterday—I didn’t get home until after 8! Boo!

But I still made time to throw together a yummy vegan pizza. <—my first cheese-less pizza!


Veggie Pizza on a Quinoa Flax Crust


Quinoa Flax Crust


  • 2 T. cooked quinoa
  • 2 T. whole flax seeds
  • 3 T. rolled oats
  • 1 T. Braggs liquid aminos
  • 1 T. extra virgin olive oil
  • 1 T. whole wheat flour
  • a little almond milk
  • stevia

To make:

  1. Coarsely grind flax seeds, oats, and quinoa (I used my magic bullet attachment).
  2. Add the rest of the ingredients and blend until smooth.
  3. Sprinkle a little whole wheat flour on a cutting board and form the dough into a ball (it will be sticky, so use as much flour as you need).
  4. Spread onto a greased baking sheet into your desired shape.
  5. Bake at 375 for about 10 minutes (or until crust is slightly crispy).
  6. Add your toppings.
  7. Broil for a minute or two and enjoy!

I topped my pizza with extra spicy homemade red sauce, sautéed veggies (mushrooms, peppers, spinach), and nutritional yeast.

Extra spicy red sauce: 1 can natural tomato sauce, 2 crushed garlic cloves, spices to taste (Italian, oregano, cayenne, S&P, crushed red pepper, stevia)

This pizza was delish—surprisingly I didn’t miss my usual goat cheese addition much! Next time I might try Daiya per your suggestions!

I also managed to get in a quick 2-mile interval workout. A little sweat is better than nothing!

My nightly sweet snack came in the form of a fruit bowl topped with almond butter, cinnamon, and cacao nibs.


A spoonful of almond butter means healthy fats in each delicious bite!  Winking smile


Quinoa Pizza Bowl


Totally inspired by my pizza dinner!

I layered chopped spinach, quinoa, and sautéed veggies (peppers + mushrooms),


and I finished off the bowl with extra spicy red sauce and nutritional yeast!

Mini apple with Justin’s maple almond butter + cherry cashew pure bar !

Adam is not doing the vegan challenge—but his lunches are still nice and healthy!

Organic peanut butter sandwich, whole wheat goldfish, apples + blueberries, and raw almonds all packed up in the bento!
