It’s been an exciting day for me! I got to work with three of my amazing clients today which always makes me happy :0) I also checked the mail and found my June/July issue of Paleo Magazine which had a special feature on a certain Personal Trainer…ME!!!
It was so exciting!! I also got to practice my strict pullups, which always makes me feel like a bad ass!! I have worked for years on a pullup and to actually have on makes me so happy! I got a little video of my third one after a workout, so it’s not as impressive, but still awesome.
Tim got his new business cards too! What a stud!!
This morning, one of my clients and I went to New Seasons after training for brunch! We shared a rotisserie chicken and devoured some amazing soup- Zucchini Cilantro Soup.
It was so amazing that I set out to duplicate the recipe. So, here it is for your enjoyment!!
Zucchini Cilantro Lime Soup
Inspired by New Seasons
Makes about 6 cups
2 tablespoons olive oil
1 large sweet onion
3 small green zuchhinis
1 bunch cilantro
24 oz low sodium vegetable broth
Juice from 1 lime
salt/pepper to taste
In large stock pot, add oil and onions. Cook for 7-10 minutes, until onions are slightly brown and caramelly (yumm!!!). Add chopped zucchini, cover and cook for 5 minutes.
Stir in cilantro and cook for 5 more minutes. Add in broth and cook for 10 minutes until veggies are tender. Add in juice of lime, salt and pepper. Use immersion blender, blender or food processor to blend unto puree.
Use goat cheese to garnish. Serve hot, warm or cold.

My favorite soup has got to be Cippinno - an Italian FISH stew with scallops, shrimp, white fish... Oh my, so delicious. Unfortunately it's getting a little too hot to eat it right now! Can't wait til the fall! :)
