Vegan Kale Parmesan Recipe & Mountain Rose Giveaway
Posted Mar 27 2013 10:30am
Happy Wednesday to you, I hope you are having a great week so far!
Photo Food Journal:
Today, I am posting a picture of everything I ate yesterday. I started off with some green smoothie , this one had a whole bunch of baby greens that really needed to be used up, plus a bunch of other goodies including mango, strawberries, flax, chia, hemp milk, and my superfood additions :
I had my appointment with yesterday to have some laser work done on my scar to hopefully stop the keloid from getting worse. It ended up hurting a lot less than I thought, especially because we skipped the cortisone injections (phew). I’ll need a few more laser treatments, but I think it already looks less red today which is a good sign.
Do you know about these noodles? How come I have never discovered them before?!? There are several types, but the version I used is tofu-based, I found them at my health food store:
It’s kinda hard to read, but here is the nutritional info:
Oh my goodness, this is my new favorite food! They taste very bland by themselves, but mixed up with veggies and a flavorful sauce, they have great texture and taste equally as good as regular wheat-based pasta to me.
So, back to what I was saying, I made dinner by first steaming the kale, squeezing it dry, chopping it, and then adding the “cheese” sauce:
I then boiled the noodles to warm them up, drained them, and added them to the kale and sauce:
Topped with more nutritional yeast, this was an amazing, healthy dinner that I’m calling Kale Parmesan (I will make this recipe available on my app, Vegan Delish , today or tomorrow):
Alan asked if I could make it with just the noodles and the sauce, until I reminded him that, no, duh, the kale is what makes it healthy. That’s what he gets for living with me.
Vegan Kale Parmesan
4 bunches of kale, washed with stems removed and discarded
extra nutritional yeast, for topping
2 packages shirataki noodles, drained
Steam kale in a steamer basket for six minutes. Drain in a colander. Wrap the kale in a clean dish towel and squeeze out the excess moisture, being careful not to burn your hands. Place the dry kale in a large bowl and use kitchen scissors to chop roughly. Add the Saffron Cheese Sauce and stir to combine.
Next, boil the noodles for several minutes and drain. Add to the kale and sauce and stir. Serve warm topped with nutritional yeast.
Dessert was a leftover roasted sweet potato with a little bit of coconut cream on top:
My search for amla powder based on the information in these videos is what initially led me to Mountain Rose Herbs , an environmentally-friendly company based in Oregon selling organic herbs, spices, and other products that support a healthy lifestyle. Since then, I’ve purchased many, many different products from Mountain Rose and finally decided to join their affiliate program about a week ago based on all of the referrals I make for them.
The kind folks at Mountain Rose have agreed to celebrate our new relationship by sponsoring a giveaway of my current favorite three products to one lucky reader!
These products include, of course, some amla powder . Here is the description:
“Amla, or Indian gooseberry, is the fruit of a small to medium-sized deciduous tree native to India. The berries are greenish yellow with a fibrous inner texture. Harvested in autumn by hand, they have a sour, bitter, and astringent taste. In Hinduism, the amla tree is considered sacred to the goddess Lakshmi. A much-beloved staple of traditional Ayurvedic medicine, amla is considered a cooling pitta herb.”
My second favorite product by Mountain Rose is their herbal coffee (you can read my full review of it here ):
The description of this delicious beverage from their website is:
“Enjoy this deep and invigorating coffee alternative. This shockingly good brew has a remarkable similarity to coffee thus making it the ideal alternative to coffee drinkers who are attempting to limit their intake of this highly caffeinated beverage. Rooty, roasted, and caffeine-free! Contains: organic roasted Dandelion root, organic roasted Chicory root, organic roasted Carob, and organic Maca powder. Caffeine free.”
Lastly, the third product that I adore and that will be part of the giveaway package is the Aphrodite Aroma Spray that I now use as my primary fragrance based on this scary article I read about the nasty stuff contained in traditional perfumes . I took a chance on buying the Aphrodite Spray without having smelled it first-hand, but I was overjoyed when I got it and absolutely fell in love with the scent. If you’re ever been in an Aveda store, then it is reminiscent of that fragrance. I use it as a body spray, but you can also use it as a room spray if you want:
Here is the description:
“Sensual, spicy and fun! This exotic aroma spray is a long-time favorite here at Mountain Rose Herbs, and contains oils from some of the most alluring and intoxicating botanicals from around the globe. Use as a body mist, deodorant or room spray. Contains: Organic Rose Geranium flower water, Witch Hazel extract and essential oils of organic Palmarosa, Sandalwood, Rose Attar and organic Patchouli.”
To enter the giveaway for these three products, please leave a comment on this post telling me one item you’d like to try from Mountain Rose (check out all of their offerings by going to their website using this link ).
I will select one lucky winner using the random number generator on Wednesday, April 3rd. This giveaway is open to both my U.S. and Canadian readers, but you must be older than 18 to enter. [Update from Carrie: due to international shipping regulations, if a reader from Canada wins, we will need to substitute the aroma spray for another item that can be shipped across international borders].
I hope this post isn’t too long, but thank you for reading to the end and good luck on the giveaway. Until Friday, have a healthy, happy rest of your week. Also, feel free to connect with me on Facebook , Twitter , Pinterest , or Instagram , and don’t forget to help keep my blog going by purchasing my recipe app, Vegan Delish , on the iTunes store. Thank you!!!
