Vegan Gluten Free Cinnamon Raisin Banana Oatmeal Muffins, iHerb.com Order, Fall Fashions

Posted Aug 21 2010 2:51am
Hi Friends! Well the weekend is here!  Woo-hoo for that!  What's shaking in your world?  Scott's been traveling a lot lately, I don't always make mention of it, but thankfully he's home in time for the weekend.  I'm working though.  We're shipping passing in the night , but that's ok.  Saturday the plan is a power walk together and then who knows what we'll end up doing.  I'll be sure to let you know what we did.

Yesterday a successful recipe adventure happened when I had all these ripe bananas on my counter begging to be used.

In typical Averie-fashion, this recipe does not need any specialty ingredients, you probably have everything on hand already.

It's Vegan, Gluten-Free, Soy-Free, Tree-Nut Free, Seed-Free, and free from any complicated stand-mixers, Vita-Mixes, dehydrators.  In fact, one bowl, a fork and a spoon is all you need.

It takes 5 minutes to mix it, and 20 minutes to bake.  Then you're done and you've impressed yourself and your family.  With very few dishes dirtied Gotta love it when that happens!

Vegan Gluten Free Cinnamon Raisin Banana Oatmeal Muffins (what a mouthful of a name!)
1 large ripe banana
1/2 c dry oats
1/3 c brown sugar
1/2 c white sugar
1 heaping Tsp Cinnamon
1 heaping Tsp Vanilla Extract
1/2 tsp Baking Soda
1/3 c raisins (omit, or use other dried fruits, nuts, seeds, etc. as you prefer)
Note: If you want to reduce (or even omit) most of the sugar, feel free.  I like sugar though.
Note: There is no water, mylks/milks, or liquids added.  If you feel you need a splash of something, go for it.  A splash though, that's it.
Yields One Dozen 3-Bite Muffins

Directions:
Mash the Banana with a Fork

Add everything else
I can never remember what does what, I used Baking Soda because it was open.  Real scientific, but it worked.  I've posted here about what the real differences are.

Stir to Combine

Add mixture to muffin liners
Preheat your oven to 375F.  Let the mixture rest in the muffin liners on the counter while your oven is pre-heating as this will soften the oats a bit and give a nicer finished product, but not necessary to wait if you're in a hurry.

Bake at 375F for 10 minutes and then I turned the temp down to 350F and baked for another 8 minutes

They're Done!  Skylar loved them!
She had two of them, i.e. 6 bites, down the hatchet in record time!

Barely hardened on the outside, super gooey and warm in the middle.
 So good.  Omg.
The best of both worlds: cinny sugar oatmeal + banana bread...all in one!

If your family doesn't happen to snarf these in one sitting, store in a sealed container.
I don't think you'll have to worry about leftovers.

From my Last Post...
I blogged about the pressure I feel as a blogger to always come up with "amazing" contentSome days aren't "amazing", they are just real life.  Real life can be amazing, but not necessarily in terms of blog content that is uber riveting.

I realize I put this pressure on my own shoulders but many other bloggers feel it also, both from the comments you left me, and from talks I've had privately with many of you.  I think April said it best,  "I never think another blogger's posts are lame but I always feel my own are."  That sums up what I feel some days.  Not necessarily lame, but more lackluster, not exciting.

It was reassuring for me to hear from tons of you that you actually appreciate the "real life" posts because if someone has amazing recipes, amazing activities they do each day, it all seems a bit too perfect and you can't relate.  I'm glad you relate to and appreciate that I keep it real.

Oh and tons of you wrote in to say you also enjoy Glide Floss & Method Cleaning Products , too.

Check the comments for your peers' suggestions on their fave products.
Thanks for all the tips , gang!

In the mail, Skylar's Grandparents sent her a Cheerleader Dress-Up Set.  She doesn't even know what's in the box yet and she's already grinning from ear to ear.  Child of a blogger: Smile on Command.  haha!

She is thrilled with her gift!

The Pom-Poms are a Huge Hit!
"Hoorrrrray For Skylar!"   That's what she shouts as she's cheering with her pom-poms.

Questions
1. Best Thing You've Done or Ate So Far this Weekend?  Or tell me something fun or random about yourself!
Me = Popped a couple of my muffins before Scott and Skylar ate them all....haha!
Something fun/random = I have a pierced tongue.  I got it about 12 years ago and never took it out.  I have a clear-ish pink plastic barbell in it.  Don't want to chip a tooth so I wear plastic!

2. Dress Up Clothes.  Did you play dress up when you were a kid?  What did you like to dress up as?
I did and ballerina, rock and roll star, doctor & nurse, and fairy princess all come to mind.  I don't think I ever had cheerleader dress-up clothes.  In school, I was never a cheerleader, either.  I played volleyball, basketball, and ran track.

3. What's your favorite kind of muffin?  Do you have a recipe that you love?  Bonus if it's GF and Vegan but not essential.

4. Favorite way to use up bananas?
See my Recipe Tab for all my Banana Softserve variations.

Or check out my GF Vegan Peanut Butter Banana Bread (Gluten/Soy-Free)
A stellar way to use up some ripe bananas!

5. Does Fall Make you want to shop for Fall Clothes?
I have to say that yes, it does for me!  Even though it's hot as balls here (we're actually having the hottest weather that we've had all year right now) I am getting emails from various stores and am feeling pretty enticed by the cute fall clothes!  I am in love with chunky knit sweatersNot sure why, but I have to find one.  And also jeansNeed to get cracking on finding a pair that fits .

Does fall just make you wanna shop?  For what?
