I’m showing you some candy corn-ed love!

Ladies and gentleman, fall is here. I made it official when I turned on the heat last night (it was in the 40s!). Also, forget the fact that it’s still mid- September, Halloween is EVERYWHERE. Already. And don’t get me started on the Christmas stuff I’m starting to see too!

Growing up, I was never a big chocolate person around Halloween(boy, did that change!). But whenever my mom brought home those “harvest mixes” of mellocreme pumpkins and candy corn, I would go absolutely bananas. The bags would go mysteriously “missing” in hours. They eventually had to actually be hidden from me specifically so the rest of the family could enjoy the candy before I devoured it all.

I’ve been dying to make some homemade candy corn. Unfortunately, most recipes call for butter and milk, which just doesn’t work for mah belly. Luckily, I found an amazing vegan version from the Urban Housewife. It’s not quick, but it is easy and in my opinion, they taste even better than my favorite store-boughts. Plus, they’re super adaptable; instead of using vanilla extract, you could use peppermint, orange, coconut… I remember some of the ones from the store were maple as well.

Plus come on, you just made your own candy corn. Isn’t that worth it?

Vegan Candy Corn

Candy Corn
1 cup sugar
2/3 cup organic corn syrup agave nectar, or honey
5 tablespoons Earth Balance
1 teaspoon vanilla extract
2 1/2 cups powdered sugar
1/3 cup powdered soy milk
a pinch of salt
Red & yellow food coloring

In a large saucepan, bring the sugar, corn syrup, Earth Balance, & vanilla to a LIGHT boil over high heat.

Reduce the heat to medium & boil the mixture for 5 minutes, stirring occasionally.

After 5 minutes, remove from heat. DO NOT OVERHEAT, or your dough will be rock hard and completely useless!

Sift the powdered sugar, powdered soy milk, & salt into medium bowl. Add the dry mixture to the pan, and mix well. Let the mixture stand until slightly warm to touch, about 20 minutes. Knead until smooth.

Prepare a surface of wax paper. Divide the dough into 3 equal pieces.

Add several drops of yellow food coloring to one piece of dough & knead food coloring into the dough until smooth and color is even. Repeat using red & yellow food coloring (for orange) with the second piece & leave the last piece white, but knead it until smooth.

Roll each piece into ropes of equal length (don’t roll too thin or the dough will break) and push the three ropes together to form a long rectangle.

Using sharp knife, cut the ropes into triangles. You can make any shape you want… I love my tie dye hearts!
