Vegan Butternut Mac&Cheese + GF Apple Cider Donuts

I bought my first butternut of the season and wanted to make something different + fall festive.

Enter

Butternut Squash Mac+Cheese  (Vegan)

 

Changes I made to the recipe:

used more than 5+ tablespoons  of nooch (probably a good 1/2 cup)

mix ins included: sauteed mushrooms, wilted spinach

topping: a sprinkle of whole wheat panko for crunch, pepitas, plus shredded raw goat cheddar (which, de-veganized it haha). Set under the broiler till’ melty

The verdict? So delicious. I’ve never made mac and cheese without…cheese. Nooch and butternut= a creamy, delicious dish! I tried the sauce and was like woahh, this is going to be good! My family enjoyed it mucho.

Two recipes I highly, highly recommend making! My house smelled glorious of roasting squash and apple cider  on a cool, fall day.  Ah, it was heaven. If you have cider and squash on hand, make two very easy + delicious recipes!
