Vegan Banana Nut Muffins

How’s it going? So glad you are all psyched about the Vega Sample Giveaway ! I will announce the winner tomorrow morning so make sure you sign up if you haven’t already!!! I am glad to hear that a lot of you have done the Thrive in 30 Campaign ! I really enjoyed it…the videos and lessons are amazing!

I have another recipe for you all today….

I spent the past couple days in the kitchen testing out some new recipes. I am not usually that patient with my concoctions..if it doesn’t turn out I usually move on. I wanted to come up with a muffin that was free of any added sugar, made with a healthy flour, no oil and delicious. Simple enough..right? This took me two batches to get it right, and when I did…well…I am embarrassed to admit how many I “tested.” Ridiculously Delish-e-ohwsa

 

Ingredients:

2 Cups Oat Flour (to make grind up oatmeal in a food processor)

3 Ripe Bananas

1/2 Cup Unsweetened Organic Apple Sauce

A little less than 2/3 Cup Unsweetened Vanilla Tempt Hemp Milk (or nondairy milk of choice)

1/2 Cup Chopped Walnuts

5-6 Pitted Medjool Dates, chopped up small (or dried apricots)

1 tsp Vanilla

6-7 drops Alcohol-Free Liquid Stevia ( I use NuNaturals )

1 TBSP Wheat Germ

1/2 TBSP Ground Flax Seed

1 tsp ground cinnamon

1 tsp ground ginger

1/2 tsp nutmeg

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Method:

Preheat oven to 350 degrees. Grease a 12 serving muffin tin.

Peel bananas and mash them up in a bowl. Add apple sauce, hemp milk, vanilla and stevia and stir well. In a separate bowl mix oat flour, baking powder, baking soda, salt and spices. Add dry ingredients to the wet ingredients. Fold in the nuts and dates (apricots).

Evenly scoop the batter into the muffin tins and bake for about 28 minutes. Oven times may vary!
