Try It Yourself Series: Gluten Free (Day 7)

TIY Overall Experience

My apologies for such a late Day 7 of my Try It Yourself: Gluten Free experience. My final day of the series was great. Overall, I had an excellent experience going gluten free. It wasn't as challenging as I had thought it would be. It required some planning ahead, but in the best way possible. It helped me to really think about what I put in my body and ensure that it's all healthy things that will be a direct benefit to my body. Going gluten free helped decrease a great deal of bloating I was experiencing and made me feel much better about what I was eating. Coming out of this Try It Yourself Series, I think I will stick with a relatively gluten free or reduced gluten diet simply because it makes me feel good. That being said, I won't be eliminating gluten entirely. I may treat myself every once and a while!

Let me know if you decide to try removing or reducing gluten from your diet or if you've been gluten free for a while! What has your experience been like?

Alright, let's fastforward to today!

Breakfast

I woke up excited to try a new Bob's Red Mill recipe. This time, I picked up Gluten Free Cornbread Mix to try.


I also had the chance to use some farm fresh free range eggs from a friend of mine. They're so pretty, aren't they?!


The cornbread muffins baked up very nicely! They expanded much more than I thought they would and turned out fairly light and fluffy.



I had the extra bit leftover from the cornbread mix that I made into a mini loaf for breakfast along with a small banana.


Lunch

I wasn't very creative at lunchtime, so I made some healthier nachos using gluten free tortilla chips, a very small amount of light mozzarella cheese, bell peppers and red onion.


Afternoon Snack

I brought some raw veggies and southwest ranch dip to eat during class. I ended up eating the entire bag minus a few bad carrots. They were so fresh and tasty!


Dinner

I didn't take any photographs of dinner because I spent it at a dear friend's house. We had vegan gluten free dairy free vegetable soup and a piece of homemade gluten free bread. It was delicious! We spent the rest of the evening at the mall looking at all of the clothing, which neither of us ended up buying. I picked up a birthday cake soy tea latte sweetened with agave nectar to drink as we shopped. It was INCREDIBLE! Best drink I've had in a long time!


Just another tea to add to my tea addiction! I might have to pick up a tin of my own birthday cake tea so I can have birthday cake tea lattes more often!

Workout

Today was a bit of a mess, so I didn't end up making it to the gym. There was a mix between freezing rain, snow and rain, Casey was at work much later than normal, and Zeke wasn't too impressed with the weather outside. Although I didn't have a chance to get out to the gym today, I did manage to fit in a workout at home! I did some bicep, tricep and shoulder work using a set of dumbells, such as pushups, shoulder flies, bicep curls, tricep extensions, etc. I also threw in a bit of carido every so often with some jumping jacks, mountain climbers, and high knees.
