Truffle, Noodle & Cookie Trials

We’ve been trying a lot of new stuff in our house lately, so I thought I’d do a little round-up today to share some of our favorites!

Rande posted this truffle recipe on her blog last month, and I couldn’t believe how simple they were to make! I think they’d make an elegant dessert for any goat-cheese lovers in your life. :D (Austin is NOT a goat cheese fan, so he didn’t care for them… they definitely have a goat-y flavor. Which is probably why I love them!)

Since spaghetti squash has been MIA at our grocery stores lately, I’ve been on the hunt for a good grain-free noodle for Austin. He’s not a huge fan of zucchini noodles, and the sweet potato “noodles” I make for him don’t pair well with all sauces, flavor-wise.

So, when we saw these Miracle Noodles at Whole Foods the other day, we decided to give them a shot!

It actually freaks me out when a package of noodles has zero calories–> how does that work? I was also seriously put-off by the smell of these noodles, as I was draining them. The smell is… weird. But, it does go away after rinsing the noodles according to the package directions.

Austin was actually quite a fan of these guys!

Last night, I served them in a Sweet Potato Curry Sauce , and I’ve tried them in Veggie Chow Mein , as well. Both ways were a hit, so I guess these noodles are here to stay.

Weird smell, and all.

I feel like I’m a little late jumping on this new hair-tie bandwagon…

A friend of mine gave me my first one with a birthday gift last month, and now I’m totally hooked! These hair-ties don’t leave massive “crimps” in your hair, and look so cute on your wrists– like a bracelet! I ordered the set above on Amazon , but I’ve heard there are also some cute prints available at Nordstrom, too.

I typically use my Gymboss to time my running intervals, but when I heard about this Couch to 10K running app , I was intrigued!

This 14-week training program has you run just 3 times a week, with a voice “coaching” you when to run and when to walk! I tried it for the first time yesterday, and am already sold. I’d gotten awfully lazy with my cardio over the past few months, so this is just the motivation I need to push myself back into a running routine!

Okay, so these aren’t really new. They’re just a new format for enjoying my Banana Coconut Muffins! I didn’t want to waste cupcake liners, so I simply scooped the batter using a 1/3 cup, and dropped 8 mounds onto a baking sheet, lined with a Silpat. Bake the scones for 15 minutes at 350F, turning halfway through baking, then allow to cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Austin’s breakfast for the week is solved! :D

After all that cookie talk yesterday, I couldn’t wait to try my hand at a batch of grain-free “Oatmeal” Raisin Cookies!! I think I nailed the flavor, but the texture is off… Austin and I both agreed they needed some tweaking. After each stuffing our faces with the samples, of course.

The next batch might have to wait a while–> I’m kinda cookied-out.

(Never thought I’d say that!)
