Tropical Traditions Coconut Flour Review and Giveaway

Posted Apr 17 2011 8:00am

Confession: I’m not a baker.

I do the best I can, but I’m more of a “cook” or a “chef.” I don’t like to measure!

Regardless of my lack of baking skills, I was actually excited when I recieved my sample of Organic Coconut Flour from Tropical Traditions.

Before I was contacted for the review, I didn’t even know that coconut flour existed. Then, when it first came in the mail, I was actually really curious as to what it actually was.

According to Tropical Traditions’ website, you can substitute 10-30% of grain flours with coconut flour, and up to 100% with muffins and quick breads.

I quickly learned that coconut flour is very different from the all purpose flour that you’d normally buy at your local grocery store. Coconut flour seems more dense and fluffy than regular flour and its something that you really need to learn about before baking or cooking with.

I decided to use one of the many recipes you can find on the Tropic al Traditions website instead (for my first time cooking with Coconut Flour).

Ingredients

  • 4 eggs
  • 2 tablespoons vanilla extract
  • 1/2 cup full fat coconut milk
  • 2/3 cup organic apple sauce
  • 2 egg whites
  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • Dash of fresh ground nutmeg

Directions

  1. Mix all the wet ingredients, except the egg whites. Beat the whites to foamy peaks with a pinch of salt. Mix all the dry ingredients.
  2. Slowly fold in the dry ingredients to the wet ingredients. Then continue to fold the mixture with the egg whites trying to preserve as much volume as possible. Cook as directed on waffle maker.

These were freaking delicious. They were by far the best waffles I’ve made to date!
