Tropical Green Smoothie. For someone who doesn't like salad.

One of my sister's has never eaten a salad in all of her 33 years.  I just don't get it, they are fresh, full of nutrients, and in my opinion delicious.  She likes her vegetables cooked, making it difficult for her to eat vegetables until dinner time and with three kids under 6 she's lucky if she gets to eat a dinner at all besides eating what the kids have left on their plates.  ​
When I was down there visiting last week she said she had ingredients to make a green smoothie, so I picked through her fridge/freezer and pantry and came up with something pretty tasty! You can make both servings for yourself and put one in the fridge for tomorrow.


Tropical Green Smoothie
Makes 2 Servings
2 cups fresh Spinach
12 oz. Coconut Water
1 cup chopped Pineapple
1 1/2 cups frozen Mango

The texture of this smoothie is more like a juice, since we used coconut water instead of coconut or almond milk.  Super refreshing, hydrating and a great way to get your vegetables in the morning!
