Is there such a thing as too much of a good thing? Not for me. When I find something I enjoy, I usually stick with it. Too much? I think not. This goes for books, clothes, and definitely food. If I read a book I like, I will read all the books by that author (Colleen Coble rocks!). Look in my closet and you will find different colors of the same shirt. Why? Because I bought one, liked how it felt, so decided to go back for more. Then there’s good food. There are multiple levels of good food.
Breakfast: Overnight OIAJ with Almond Butter
This is by far my favorite breakfast. The thick, creamy taste, especially when paired with almond butter is oh so satisfying. On the Good Food scale, overnight oats fall between a level 1 and a level 2. I can usually on go one day without having overnight oats. After that, I go into withdrawal and start craving it. Almond butter is a different story. It is mandatory almond butter (or any other nut butter) at least once a day. And sometimes once isn’t even enough to satisfy my desire. I have been eating an almond butter sandwich for dessert every night for over a year now and I’m still not tired of it. Almond Butter is like a third limb, you just can’t separate us.
How many sandwich’s have I eaten since I started this blog? Too many to count. But not too many to make them boring. I love the creativity I have when making a sandwich. choose the bread, choose the vegetables, choose the meat (or not), choose the sauce. There’s no limit. Today, my sandwich was no exception.
Whole wheat bread, spinach, avocado, tomato (put on right before eating to prevent bread from getting soggy.
I had to take the chicken off because it was tasting funky. Instead, I added a spread of hummus. On the side, I ate a bunch of crunchy carrots and some sweet-potato chips.
Snack: strawberries & Almond Clusters
Fruit is a “My-Day’s-Not-Complete-Without-You Food.” Must. Have. Fruit.

Dinner: Take-Out from Bento Box
The kitchen is still un-useable, so I picked up my dinner again. I went with my usual 1/2 brown rice 1/2 steamed cabbage, a grilled chicken breast, and a side of steamed broccoli.
Eating with chop-sticks is fun and makes food taste better.
Dessert: Nut Butter Sandwich on WW Bread
Love. Super Love. Super Duper Love.
Even better with a warm, smooshed banana & cinnamon. sometimes, I can’t make up my mind which nut butter to use so I use a little bit of each. Each bite offers a surprise. Just keeping my taste buds on their toes.
So for me, there is no such thing as “too much” of a good thing. I am happy when eating something I enjoy. I never tire of my overnight oats, greek yogurt, bananas, or almond butter. Rather, the more I eat them, the more I want. I love waking up knowing there’s a jar of overnight oats waiting for me. It get excited about creating a nut-butter sandwich for dessert. “Too Much?” I think not!

Hole where the oven used to be. Look at my daring breakfast jars as they stand on the edge. The floors are supposed to put in tomorrow! Happy Dance! Fingers crossed everything goes as planned.
