Tonight’s Dinner is Brought to You by Trader Joe’s

Nerd Alert!

Tonight I’m sporting the two computer look often used by investment bankers, designers, and other cool techies.

IMG_4610 My level hasn’t reached this crazy level,  but it certainly helped my efficiency while working from home. I was able to download a presentation on one computer, which slows down the computer speed considerably, while chatting with Meghann and planning our NYC weekend on the other computer! 

I spent the rest of this evening setting up my running calendar and cooking a healthy dinner. Unfortunately, my yoga plans with Erica were cancelled since I wasn’t able to leave work early enough. This is a perfect example of why I work out in the morning versus evenings.

Tonight’s healthy dinner was brought to you by Trader Joes !

IMG_4606 Have you tried Trader Joe’s Roasted Chicken Patties? These patties are great dinner options since they only take 1 minute to heat in the microwave, are packed with protein and only 140 calories, and stay fresh in your refrigerator for over two weeks while sealed!

My body was craving some greens and luckily my Trader Joes stash from Saturday’s shopping trip was able to deliver. My mom had never seen a Trader Joes so we spent a good hour exploring the aisles and I discovered some great new staple items.

#1 Pre-cut and washed green beans: Perfect raw as an afternoon healthy snack with hummus or steamed with Garlic Gold .

IMG_4607  #2 Small bags of baby spinach Historically, I’ve always found Trader Joe’s baby spinach in HUGE bags which would inevitably go bad before I could use it. Tonight’s smaller bag was the perfect size for two portions of sautéed spinach. Tonight’s sautéed spinach was joined in the pan by tomatoes, garlic gold , and some olive oil. It was a fresh, delicious combination! IMG_4603

The final combination was a colorful combination that left us both full, satiated, and rich in minerals!

Upcoming Running Calendar

If you’re in the NYC area, I’d love to meet for a long run or race! After some motivation from friends, I’ve signed up for the following Fall races.

September 11th: Fitness Magazine Mind+Body Spirit 4 mile run (plus 7 or 8 more miles to make 10-11 total)

September 19th: Marathon Tune Up - 18 miles in Central Park (YIKES!)

October 2nd: Grete’s Great Gallop Half Marathon 13.1 miles (plus 7 to make 20 total)

October 10th: Staten Island Half Marathon 13.1 miles

October 31st: Poland Spring Marathon Kickoff 5 miles

November 7th: NYC Marathon 26.2 miles!!

6 races in 66 days is sort of overwhelming! Hopefully I’ll find some friends to run these fun races with and make running dates out of them!

The awesome Meghann is in town this weekend with her boyfriend Derek for a fun NYC weekend. Sunday works best with most people’s schedules so we chose 3pm at Stogo Vegan Ice Cream http://stogonyc.com for the blogger meetup!

If you’re not able to join us at Stogo, a few of us are also doing a long run (+15 miles) bright and early Saturday morning. Guest appearances are always welcome! Let me know if you’re interested!
