Tomato Salad & Stuffed Cookies

A few days ago I proudly showed you my maters that I grew with my own two hands:


I wanted to make something special with them – not just use tomato slices on sandwiches and tomato chunks in salads. I thought they deserved something a little better than that! I almost settled on making salsa but then I remembered a recipe from The Pioneer Woman (her new show on Food Network!). Honestly I didn’t even know she had her own show, but I randomly turned on Food Network last weekend and watched the first episode.


In addition to making a super delicious looking tomato salad (or as she says: Tah-May-Tah Salad) she also made some breakfast sandwiches that involved Texas Toast. That immediately brought up memories of my Dad making us French Toast along with the best cooked bacon on earth. Seriously my Dad makes the best bacon. He also makes the best Jello Cake , but you already knew that Smile

So I set out to make the tomato salad using * this recipe *.

I will say, that I am GLAD I read the comments/reviews on Food Networkabout this recipe, because I learned that the recipe calls for waaaaay too much oil. The recipe asks for 1 cup of oil, I used ¼ cup and it was still too much, so I spooned out some of it. I didn’t want super soggy oily tomatoes. It tasted really good!


And since I’ve been on a cooking/baking/growing tomatoes storm, here is another treasure that came out of my oven recently:

Check out Averie’s recipe to learn how to make these. They were so good – how could cookie dough + Snickers not be good? My coworkers ate them up in no time at all.


I’ve been getting back into my training schedule which has been so nice. I have made one change, which is not running on Thursdays and only doing strength training on that day. So, I’m running 3-4x, strength 2x and 1 complete rest day each week. Here is what I did this week so far:

  • Sunday: rest
  • Monday: Strength ( FBB A)
  • Tuesday: Run 4.5 miles (40 minutes)
  • Wednesday: 40 minute tempo run (10 minutes 6.2, 20 minutes 7.0, 10 minutes 6.2) – treadmill
  • Thursday: Strength (FBB B)
  • Friday: rest
  • Saturday: Run 6 miles

So, a good week overall. I still can’t get over (and LOVE) having a 6 mile run be my long run of the week. Marathon training earlier this year sure helps me appreciate the shorter long runs I’ve been doing lately.
