Today, I sat at the doctor's office for 4 hours while my mom had some routine tests done (no worries!). My new phone, crocheting a blanket and daytime TV kept me entertained.
I saw the Rachael Ray show (who gets 1000 bonus points for spelling her name correctly, like me!) and she made some awesome bread that I knew I wanted to try.
My mom and I had a big lunch, some different things from the Asian bar at Wegmans, so we decided to skip the eggplant leftovers that we planned on and I just made us this amazing bread!
First, I started with my ingredients. A loaf of French bread, garlic, tomatoes, salt, pepper and olive oil, which didn’t make the picture! I cut up half the loaf into four big pieces and put them into the oven to toast up a bit.
I took a clove of garlic and smashed it to get all of the good garlicky flavors going!
After about 5 minutes I took the bread out and I spread the garlic on each piece of bread.
Next, I cut a tomato in half and squeezed the juice onto the bread as I rubbed it on.
Lastly, I drizzled EVOO and added a tiny bit of salt and pepper.
I let the bread bake for about 10 minutes and while I waited I cut up some brie. YUM YUM YUM!

When the bread was ready, I plated it up with a bit of brie and some eggplant dip.
This recipe was DELICIOUS. One thing that I would change is using different tomatoes. I used Roma and they were not that juicy but then again, they are out of season. I would definitely make it again to go with pasta or even as an appetizer!
