Tomato Basil Salad

This is perfect with a pasta dish. It has 2 of our "power foods" (tomatoes and olive oil) plus basil, which has no calories, lots o' taste, and oodles of health benefits such as


*It's a natural source of beta-carotene, an antioxidant which combats
free radicals in the body, preventing damage to blood vessels and the build
up of cholesterol in the blood stream.
*Basil has also been known to help with inflammatory health problems such as rheumatoid arthritis and inflammatory bowel conditions (source: theherbspiral.com)

-1 cup halved grape or cherry tomatoes (organic if possible)
-1/4 cup fresh chopped basil
-1T olive oil
-salt & pepper to taste

Mix all ingredients and let it sit for 20 minutes at room temperature and POOF...
you just added fiber, vitamin A, vitamin C, and iron to your tummy!
