Today’s Tastes: Apricot Greek Yogurt and Gourmet Grilled Cheese

We made it to Friday!  Hope yours is going well so far!

I’m running around this afternoon trying to put together some sort of costume for a benefit tonight but don’t think the  lion is going to be happening.  Sad, but I couldn’t find any legit faux-fur for a lion’s mane in the fabric store so now it’s time to go buy a costume, or at the very least, a wig.

Breakfast this morning was a new creation: Chobani Greek Yogurt (plain) topped with with chopped, dried apricots, a drizzle of honey and homemade granola , which I packed on the side since I took it with me to school!  I loved that it was tart, had a touch of sweetness and great texture.  Yum.  I’ll definitely be packing this for breakfast again!

The weather is gross and cold today, as much of the East Coast is, which left me wanting a warm and gooey grilled cheese for lunch, which I decided to play around with by adding some fresh mango to!

Um, this grilled cheese ROCKED my world.  I used Provolone cheese, organic, high fiber, whole wheat bread and just a touch of butter in the pan.

You pretty much can’t go wrong with cheese and mango but adding mango is a tasty way to add some extra vitamins to your grilled cheese!

Well, it’s time to fight the crowds at the Halloween store before heading to a late-afternoon power yoga class.  I wonder what I’m going to be dressing up as tonight!
