I thought today I’d give you a peak into my meal plan for the week. Every Sunday I write down what we’re going to eat and then head to the grocery store. One of the things I like to do is to eat the same meal two nights in a row. It minimizes the cooking and the cleaning this way.
Sunday and Monday - Homemade soup (squash, cauliflower, and lentil) with a baguette
Tuesday and Wednesday – Rice Loaf (a new recipe I’m trying out this week)
Thursday and Friday – Curry fettuccine with peas
Lunches = sandwiches (chicken, tofu, or hummus) or crockpot stew
