This is not a funny April fool’s joke. I’m not laughing. I’m shoveling.
Yesterday there were greens coming up in the front yard. There were buds on the tree. Today, there is snow.
We are going to a spring wedding in 9 days. I hope it is spring-like by then. This snow is heavy and thick, it doesn’t seem like its going anywhere fast.
Since the weather is fighting for winter and I am fighting for summer, and P-O’s got the sniffles, I though some spicy black bean soup would be the best remedy. (Soup for winter/ Mexican food for summer/ Spice to clear out the sinus.)
I have had a packet of black bean soup sitting around for a while. Tonight was the night to break it out.
Black Bean Soup
½ onion chopped
½ green bell pepper chopped
3 chopped scallions
1 tbsp chili powder
3 cups water
1 packet of black bean soup mix
Sauté onion and pepper, add chili powder ½ way through cooking.
In a medium pot, combine soup mix and 3 cups of water, bring to a rapid boil.
Lower heat to simmer and add sautéed veggies.
Cook for 20-30 minutes, or until beans are soft.
1 tsp nutritional yeast
* Heat oven to 350.
*Cut the pitas into 8ths.
* Arrange pieces on a greased baking sheet.
* Sprinkle with nutritional yeast.
* Spray with cooking spray.
*Bake for 10-15 min.
I topped mine off with some amazing salsa!
Perfect to warm you up, and get you thinking of warmer times.
Now I’m going to be greedy and say, I don’t even want spring, can we just go right to summer!
