Thirsty Hot Cocoa Thursday

OK….so maybe Beet Root Juice isn’t the ONLY thing I am craving ;-)

The cold, rainy, chilly weather had me craving something warm, sweet….and chocolate :-)

Chocolaty Hot Cocoa serves 1

(dairy-free!)

1 1/2 TBS Unsweetened Cocoa Powder (I like Ghirardelli)

1 teaspoon Carob Powder

a Handful of Vegan Chocolate Chips

1 cup Unsweetened Almond Milk

1/2 teaspoon vanilla extract

1 teaspoon Agave Nectar

2-3 Vanilla Marshmallows, cut up (I use the fresh packed kind from Whole Foods)

Place milk and all the chocolate in a saucepan and whisk. Add vanilla and agave and continue to whisk frequently until it’s steaming. I like mine extra chocolaty…you can cut back on the cocoa powder or omit the carob powder if you want it more mild!

This recipe can easily be doubled or tripled!

Last night I was feeling like soup. I was NOT feeling the whole process of making it though. It’s great that I can go to the store, and get a yummy organic soup

and NOT have to worry about the BPA poisoning from a can.

There were a variety of brands to choose from:

so I bought a few.

This is the one I went with for dinner:

so yummy…and cheaper than buying all the ingredients myself….mine is a little bit better…but there is nothing shady in this soup at all. Besides, it saved me a few hours of preparation and clean up.

In honor of the first night of Hanukkah I also bought (again, not in a cooking mood) some vegetable latkes:

they were JUST OK.

I really want to try making sweet potato latkes. Potato latkes are tough enough to make as it is…but one day I will tackle that challenge ;-)

By the way…Michael DID ask me where his Hanukkah present was. I told him he’s tough enough to buy ONE present for…let alone 8. Then he said, “well you should of at least got Munchkin a Hanukkah present, he is a Jewish cat.” Just lay on the Jewish guilt, honey. It doesn’t work as well with us gentiles though ;-)

I am off to work, then more primping and prepping for my cousins wedding this weekend!! Another airbrush tan is in the agenda..this time, I am going to someone that will actually airbrush me. This way, I will not look pasty in my cranberry red dress ;-)
