Good evening!
I am blogging from Kill Devil Hill’s North Carolina. My mom and I arrived safely in the outer banks on friday around 5:30 and headed straight to the expo to pick up our race gear. We knew Saturday would be crazy and def. wanted to get it out-of-the-way. Once we got our pirates booty we headed to the beach house to unpack all our stuff. For some reason I always over pack and it was no different this time.
We then headed over to this great place called the good life gourmet. It has amazing sandwiches, salads, and soups and my mom and I love to eat there. Unfortunatley I was so hungry I didn’t even think about taking a picture of my food and destroyed it in seconds. My mother got the vegetable Panini and I got the roast beef wrap with tomato, lettuce, bistro sauce, and hot peppers. We split the sandwiches and boy were they delicious.
Today we woke up and had an easy morning. I made an egg white with a bunch of fruit for breakfast because I knew I would be eating a larger lunch. We traveled around the outer banks for awhile and then stopped at the expo to explore. While we were there we sat in on a clinic on the proper nutrition after the race. My mother learned a ton. She never listens to my advice and hearing it from someone else really reached her it made me so happy. 
We then ate at a little cafe in downtown Manteo called The Full Moon Cafe. Again, the food was outstanding. We sat outside and yes it was freezing but it was beautiful. There were so many good things on the menu it took me forever to decided but I decided on the rainforest sandwich. It included: carrots, cucumbers, olives, spinach, tomatoes, onions, portebellas, swiss cheese, and a drizzle of their homemade herb dressing on a baguette. Words can’t explain I’m sorry. It came with a side of chips and salsa which were extremely fresh. I took off half the cheese and half the bread because to much cheese hurts my stomach and the bread was slightly hard. 
We also went to see the Michael Jackson movie today. It was very moving. He was such a phenomenal human being and his talent is unreachable. He has drive, charisma, motivation, the brains, and his perfectionisitic personality makes him unbelievable.
I made dinner for us tonight because I wanted to know what was in my food the night before the race and it cuts down on cost. I made a vegetable and deer sausage lasagna with minimal noodles and maximum veggies.
Veggies included:
- Brussel sprouts
- broccoli
- artichokes
- acorn squash
- spinach
- mushrooms


Along with part skim mozzarella and low skim ricotta. Although it was semi-watery I thought it was so good. I was pleased and am going to be dreaming about leftovers all day tomorrow.
I am now off to watch television with my mom for a bit before the big day tomorrow. I am excited and scared and feel I am going to mess up somehow. We will see, it’s just a long run right? haha Have a great night everyone.
