The Joy of School ...

Hey!

Last night I got hungry despite my sweet potato filled dinner so I ended up eating a small cucumber and two Wasa Light Crispbread crackers with a smear of peanut butter. But I figured you all know what that looks like!

Oh and before I move on to breakfast I wanted to clear up some things about my schooling. Right now I am an LPN which is a nurse.. but it is on the lower end of nurses. Since I already have a license I am shooting for the next degree up which is an RN and I will get it in about 2 years! Hope that clears up some of your confusion :)

So this morning I set my alarm for 7:30 and then got ready for school. Let me just say 7:30 is SO nice compared to the 4:30 wake up call when I was getting my LPN! I decided to make a massive bowl of oatmeal to hold me through my two classes I had today. Today’s mix included:

  • 1/2 cup oatbran cooked in 1 1/2 cup water + cinnamon, ginger, stevia
  • 1/2 cup pure pumpkin 
  • 1 tbsp chia seeds (stirred in after oats were cooked)
  • 1/4 cup liquid egg whites (tempered in after heat was turned off)
  • 1/2 pear (diced and thrown in after oats were cooked)
  • 1 tbsp Costco Organic Peanut butter

And then I headed to my Analytical Writing and Algebra course. When I came home I was ready for lunch! I stuffed a Western Bagel Alternative Whole Wheat Pita Bread pita with:

  • 1/2 avocado
  • Scoop of tomato paste
  • 4 slices Hormel All Natural sliced turkey
  • Fresh green chili, cayenne pepper, black pepper
  • Spinach leaves

And I had some steamed broccoli with Braggs and a cucumber on the side:

And then I headed to Staples to buy a scientific calculator. When I got home I started on some homework.. oh the joy of school! 

I decided to try a new class out at the gym so before I left I had 1/2 cup Fage 0% mixed with 2 tbsp PB2, 1/2 pear, and cinnamon:

And then I headed to the 55 minute Lift class at the gym. It was basically total body weight lifting! And then afterwards I did 30 sweaty minutes on the stairmaster (aerobic intervals setting level 6.)

And then for dinner I had a simple salad consisting of a piece of salmon, mixed greens, 2 chopped sweet peppers, and homemade salsa. Plus a slice of Alpine Valley Multigrain Bread with 2 tsp The Heat Is On peanut butter:

Yum! I’m more of a sweet peanut butter girl but the spicy peanut butter complimented my meal nicely.

Well I’m off to finish up some work and get ready for tomorrow..I’ve got my fair share of classes tomorrow! I might get hungry later on tonight.. my body has to adapt to working out in the evening again. But we’ll see :D
