The easiest garlic hummus ever

Confession time! I’ve only had hummus one time before today and I did not like it at all. I bought a container of Athenos original hummus and gagged my way through about a quarter of the container before it found a new home in the trash. I’ve been too nervous to try again with a different brand or flavor.

My anniversary gift changes everything, though, because now I can make my own.

After a little Googling and comparing a few recipes, I came up with this:


  • 1 (15 oz) can of organic chickpeas (organic garbanzo beans) drained and rinsed
  • 4 tablespoons lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 cloves crushed garlic
  • 1/2 teaspoon sea salt
  • 2 teaspoons chili powder
  • 1 teaspoon dried parsley

How to:

Throw everything into your food processor and let it whirl. If you desire a creamy consistency, scrape down the sides of your processor and then let it go again. Repeat a few times.

Extra olive oil and fresh parsley can be added as a garnish.

* This recipe makes 8 servings, each containing 127 calories, but can easily be halved or quartered (like I did today) to make less.


The star of this recipe really is the garlic. It adds a powerful kick and kept my hand reaching into the tortilla chip bag for another “scooper.”

Without a doubt, I will probably make this again. The only reason I didn’t devour the whole batch (I made 1/4 of the recipe) was to try it on a wrap for lunch tomorrow.
