The Best Whole Wheat Sugar Cookies

Breakfast

I love Mondays! I think it's the only day of the week where I actually get to sleep in and have a semi-relaxing morning. I slept in until 7am this morning, took Zeke for a walk, and spent some time getting ready.

I made a slide of whole wheat toast with raspberry jam for breakfast, along with half a cup of unsweetened applesauce and a container of Liberte 0% Greek Yogurt. Yum!




It was a pretty drizzly morning, so I knew I had to bundle up. It was also super windy!


Zeke kept an eye on the cloudy skies and watched the birds fly by.


I threw on a colourful shade of plaid to brighten up such a gloomy day...


...and covered it all up with a hint of burnt orange...my favourite colour for fall!


Lunch

I wasn't very creative for lunch today. I threw a Dole Southwest Salad Kit into a container and called it a day. I left out the cheese and sour cream. I also had a whole wheat PB&J sandwich on the side and an apple for a snack.


Dinner

Dinner was still a little unimaginative, but at least it was pretty and healthy! I ate a heaping serving of steamed asparagus with a piece of Highliner grilled tilapia that I cooked in the oven from frozen. The fish wasn't too grea, but the asparagus was amazing!



Dessert

Now comes the best part...dessert! I was feeling stressed after a busy day of class and presentations, so I made up half a dozen whole wheat sugar cookies for Casey and I to enjoy. Here is the recipe...

The Best Whole Wheat Sugar Cookies (10 cookies)
-1/4 cup softened margarine
-1/2 cup sugar
-1 egg white
-1 tbsp skim milk
-0.5 tsp vanilla
-1 cup whole wheat flour
-1/4 teaspoon salt
-1/4 teaspoon baking soda
-1/2 teaspoon baking powder
-1/4 cup cinnamon-sugar mixture

Preheat oven to 350 degrees F. Combine all ingredients together in a large mixing bowl, making sure to get out all of the lumps. Leave the cinnamon-sugar mixture aside for later. Shape into 1-inch balls, flaten out with hands, and roll them in the cinnamon-sugar mixture. Place on an ungreased cookie sheet and bake for 8 to 10 minutes or until they start to turn brown. Enjoy!



These cookies were amazing and I had to stop myself from eating any more after my first three. They have a perfect mixture of sweet doughy texture with a little bit of crunch. Delicious!


 Workout

I finally managed to get in a new workout today! I didn't have a lot of time to leave the apartment and go to the gym, so I did this Fat Blaster Workout from the comfort of my living room. Brace yourselves, this is a sweaty one!
