Yet another rainy day!! Isn't it always supposed to be sunny and beautiful on Labor Day weekends?

Some people might think reading newspapers is for old people, but I still enjoy it! I actually found out that we missed out on a Greek festival at the convention center this weekened that I never even saw advertised online. John and I had completely different breakfasts today, but I've come to the conclusion that I have cereal issues.
I can't have just one flavor in my bowl anymore..I need a little bit of each! John has been dying for french toast this weekend, but I'm not really into eating heavy things like that lately. We've been making this overnight baked french toast recipe since we started going out, and it's amazing! We found the perfect unsliced cinnamon swirl bread for it at the commissary. It's a pretty simple recipe with few ingredients.. I ate my breakfast way earlier, but while John ate we watched "Hall Pass" . I honestly was not impressed with that movie at all and naturally I didn't watch all of it. After all the communication classes I've taken and all the feminism stuff I've learned, I could definitely write a great criticism paper on that movie.. Moving along.. We headed out for another gym session and I opted for a 30 minute incline walking treadmill workout and abs instead of weight lifting. It looked a little like this: Minutes Speed Incline It was enough to get me sweating and not too much considering it is my REST day! After the gym is got reallyyy windy!

Now for some COOKIES using my favorite packaged cookies. You might recognize these if you've ever flown with Delta airlines or if you've been to Belgium. I've been wanting to make a dessert using these cookies for a while now(besides pie, because these would make an awesome crust!) After some research and finding this recipe and this one, I chose the ones more similar to chocolate chip cookies. White chocolate Biscoff cookies Ingredients: 1 stick salted butter, softened Directions: 1. Preheat oven to 350 degrees F. and line baking sheet with parchment paper. 2. Pulse 12 Biscoff cookies in food processor until they are fine crumbs. 3. Coursely chop or break up 10 Biscoff cookies into small chunks. 4. Cream the butter and both sugars using a hand or stand mixer until combined and creamy. Add eggs and vanilla until well combined. 5. In a large bowl add the flour, Biscoff cookie crumbs and baking soda. Mix to combine. 6. Using your mixer, slowly mix dry ingredients into the wet mixture. 7.Add coarsely chopped Biscoff cookies and white chocolate chips until combined. 8. Cover and refrigerate for at least 30 minutes. 7. Roll dough into one inch balls or use a cookie scoop and drop onto prepared baking sheet at least 2 inches apart. 8. Bake for 12-15 minutes until edges turn golden brown. (These are easy to burn and if they look a little underbaked, they are probably done!) 9. Remove from oven and let them cool for at least 5 minutes before taking them off the baking sheet. Really, they're that good. Despite all of the stormy weather today, I managed to see the BEST squirrel sighting in our backyard yet!! Makes my heart so happy..
