I traded in my usual Saturday morning yoga class for some extra sleep and reading time in bed. I'm not feeling 100% today so my bed and I have been bonding big time. I finally finished reading Valley of the Dolls. I had about 80 pages left for the longest time but once I got back into it, I finished it in a day. Without giving anything away, I was hoping for a different ending but still like how it wrapped up. Has anyone read it? Now I'm reading The Violets of March which has been sitting on my night table for two months. So far, so good!
I did make it into the kitchen to make some of my all time favorite marinara sauce and I couldn't wait to share it with you guys. My mom's very Italian friend shared this recipe with us and we have been eating it for years. It's so incredibly easy to make and I've been known to eat it as soup b/c it is THAT good.
- 2 cans of Tuttorosso Peeled Plum Shaped Tomatos, drained.
- Handful of fresh basil, chopped
- 3 garlic cloves, minced
- Olive oil
- Red Pepper flakes
- Black Pepper
In a medium sized pot heat olive oil over medium-low heat. Add minced garlic and sauté until light brown and fragrant.
Meanwhile, add drained tomatoes to blender. Pulse for a few seconds until tomatoes are a thick consistency.
Pour tomatoes into pot and mix with garlic. Add in desired amount of black pepper and red pepper flakes. (I usually give about 4 big shakes of both.) Sprinkle in chopped basil leaves. Mix and bring to a boil.
Once sauce comes to a boil, turn heat to low and simmer uncovered for 1 hour.
