Thank You and Sweet Potato Kale Stew

It was so weird, my husband was in the same place emotionally as I was yesterday. It is great being married to someone who also owns their own business, as we can commiserate together and share similar frustrations/encouragement.

I had so many emails of support yesterday and an awesome pantry cleanout session with a client yesterday that it boosted my mood a lot! I also made a KILLER sweet potato soup which we inhaled so fast I didn’t even get pictures!

Thank you for your encouraging words, friends! It meant a lot to me! I am feeling more ready to tackle my day today, which includes my first workout since Monday!! We did a WOD called Cindy which left my legs destroyed. It was only 255 squats….no big deal? I still can’t walk straight but am determined to get some movement going on today! Plus, I get to have coffee with one of my best friends after, so what could be better than that!?

I feel bad that I have no pictures for this recipe, so I will Google and see if I can come up with some that look similar. This was one of those recipes that was intended to be a comfort stew, so I don’t recommend it for everyday consumption if you are trying to lean out. It is mighty tasty though! I made up the recipe myself, so here we go!

Sweet Potato Kale Stew

 

 

 

 

 

 

Serves 4

Ingredients:

1 tablespoon coconut/olive oil

1 large garlic clove, minced

1 large sweet onion, chopped

1 large sweet potato/yam, cubed

1 pound stew meat, cut into bite size peices (this is optional, by the way)

3-4 cups chopped kale

3 cups water

2 tablespoons cumin

salt/pepper, to taste

2 teaspoons oregano

1 teaspoon cinnamon

1/3 cup nutritional yeast

1 tablespoon arrowroot powder (or 1/4 cup almond flour, to thicken)

 

 

 

 

 

Directions:

In a large pot, melt you oil over medium/low heat. Add in garlic (a friend recommended using a zester to grate the garlic. Waaaay easier than mincing!) and cook until aromatic, probably 3 minutes. Add in onions and cook until translucent, probably another 5 minutes. Add in cubed sweet potato and cook for 3 minutes.

In a side sauce pan, sear your stew meat until it is mostly cooked, but not quite all the way.

Add in water and spices. I didn’t really measure my spices. I just kept adding until I found a flavor that I liked. Add in stew meat and simmer over medium heat for 10 minutes. Next, add in Kale and simmer for 5 minutes, until kale is bright green. Let settle for about 10 minutes with no heat and serve and enjoy!!
