Every Friday, I celebrate the start to my weekend by chanting “TGIF…TGIF…TGIF…” to the the tune of Katy Perry’s Last Friday Night. Today was no exception.
And to think – hot pink clothes and huge permed hair used to be cool. I rocked a mean perm in middle school, complete with teased bangs.
QUESTION: HOW DO YOU CELEBRATE THE START OF THE WEEKEND?
Our weekend started with a nice relaxing night on the couch with a simple and delicious dinner. With Brussels sprouts. Yes, people, do not fear the sprout. While these little cabbage-like bundles tend to get a bad rap, I have a simple recipe that makes this little veggie Friday-night worthy.
RECIPE: EASY ROASTED PARMESAN BRUSSELS SPROUTS
Ingredients:
4 C. Brussels sprouts, split in half
2 Tbsp. Olive Oil
1/3 C. Parmesan cheese
Salt and Pepper (to taste)
Instructions:
1. Toss your brussels sprouts with the olive oil, then spread into a single layer on a cookie sheet. Salt and Pepper generously.
2. Bake at 400F for 15 minutes. Turn the sprouts, sprinkle with parmesan cheese and return to the oven for an additional 10 minutes.
SERVE HOT and ENJOY!
Seriously, once you try roasted brussels sprouts, you’ll never want to go back to the boiled version. They have this roasted, salty, delicious flavor and the parmesan melts in the oven and coats the sprouts in a crunchy-cheesy layer. Mmmmm…mmmm…mmmm…mmm…mmmm.
I had some chicken with my sprouts for dinner.
Followed by an easy smoothie (1 Cup yogurt blended w/1 Cup frozen strawberries) for dessert.
Such an easy and healthy snack.
As for the rest of my day -
This morning I started with an old favorite: Pumpkin Pie Oatmeal . Seeing as Thanksgiving is next week, I thought that these might get me in the holiday mood.

Lunch was the last of the leftover pizza from my welcome home dinner with some carrots.
Snacks included a bite of crostada that a coworker brought in (I need the recipe) and some peanuts in the afternoon.
