I decided to experiment yesterday and brought a little Tex Mex to Trinidad.
It was packed with flavor, healthy and filling!
Tex Mex Slow Cooker Chicken
Ingredients - Cook Time: 4 Hours 10 Minutes
4 skinless chicken breasts - cut into chunks
salt and ground black pepper to taste
2 cans black beans, rinsed and drained
1/2 cup chicken broth
1 cup salsa
2 shallots, minced
1 small zucchini, diced
2 limes, juiced
2 tsp ground cumin
1/4 tsp red pepper flakes
1/2 tsp coriander
1/2 tsp ground allspice
3 large cloves garlic, minced
1 cup of cooked rice - to be mixed in during the last ten minutes
sprinkle of shredded cheddar when serving
Ready to Cook!
Spray cooker with Pam.
Arrange the chicken in the bottom of the slow cooker.
Set slow cooker to LOW and cook for 4 hours.
I then added 1 cup of cooked rice and let cook for about ten more minutes.
Garnish with lime wedges and a little cheddar.
***I am pretty sure I could have put the rice in before but I'm not exactly sure how to do that yet***
