This week has been some what discombobulated . Is that even a word? Oh wait, it is.
According to Urban Dictionary it mean “out of order” or “disarranged.” Ha, I love that. It totally describes the week. But I am used it. I’ve switched teaching weeks with a co-worker so all my fitness classes are on different days this week but I have to say it’s worked out nicely with the hubs taper week. Not as many 4:45am wake up calls. Tis good!
Anyway, since the hubs is racing this weekend, our eats are a little different too. Lots more fish, veggies, and antioxidant rich meals. It’s all about the quality not quantity of calories. So here we go.
I call this my Omega Banana Nut Parfait- layer of oats, layer of flax, layer of chia seeds, layer of GF cornflakes, topped with a little kefir, NUTTZO , banana, and honey.
GF Spinach Boats- Scoop out the middle of your GF roll, toast, then add in spinach, cottage or ricotta cheese (both high in amino acids and whey), and top with tomato sauce.
Strawberry Salmon Stir Fry- Sautee diced or canned Alaskan Salmon (wild caught) with broccoli slaw, turmeric, Braggs, and little blush strawberry vinaigrette . Serve on a bed of spinach with cherry tomatoes.
Oh and we can’t forget this!! Can we all just say CHEERS to GT Kombucha today ?! I know this lady had the same!
Well, I told you it was all off today. Instead of teaching I had a steady state run followed by TRX core work . If you don’t have a TRX, you need one NOW! Go check it out ! We travel with this and it’s a LIFESAVER!
