take control

What I’m about to write is more a reminder to myself than a lesson for you, so please bear with me as I blabber for a bit.  I want to say a few words about being in control of your life.  That includes your mood, your emotions, and what you accomplish each an everyday.  Some people, such as myself, put tremendous weight on what other people (usually someone we care about) thinks.  We either want that person’s approval, or allow our mood to be determined by that person’s behavior.  We fail to completely CONTROL our lives. 

  • It is very easy to let our mood be determined by someone else.  A grumpy family members can cause you to close down or it may put you in a sour mood.  A person who is consistently negative and critical can hurt your feelings and cause you to feel down.  It is important to never let another person control your feelings.  Everyone has a right to think and feel as they wish.  We are humans.  Humans are different.  It is only natural that we all think, feel, and act differently.  You should never ever let another person’s mood or behavior affect how you live your life.  NEVER.  Live your life as you wish.  Don’t let a grumpy person turn your day upside down.  Don’t let a sad person cause you to mope.  Put a smile on your face, think happy thoughts, and lead YOUR life. Let people act as they wish, but don’t let it interfere with what you want to accomplish.  Smile, and you can do anything

Ok, I’m off my pedestal now.  Today, I didn’t so such a great job of “controlling” my own emotions.  I let another persons criticisms and negativity get under my skin and it really bothered me.  Hence, my plan to bake like a mad woman was put on hold because I was afraid of being exposed to more hurtful criticism and negativity.  To brighten my not-so-sunny mood, I decided to JAZZ up each meal.  To add something special to brighten my day!

Blueberries were the star of my breakfast.  Nothing jazzes up a bowl of Un-Overnight Oats like fresh blueberries!  My imagination took me to a place of sunshine and warmth and waves crashing onto the beac….Ok, maybe the blueberries didn’t have quite that effect.  But you get my point, don’t you?  Blueberry are amazing!

Don’t laugh when I say this, but I have never used a legitimate “steamer” before.  I know, I know!  “How did you steam your vegetables all this time?”  That is beside the point.  What is important is that my sister gave me a vegetable steamer for Christmas and I used to make steamed carrots!!!  INCREDIBLE!  I love it!  If you see steamed vegetables at every meal for the rest of my life, you know why.  I am simply a nerd when it comes to new stuff!

Then there was dinner.  A what a better way to end the day that a steaming bowl of Pappa al Pomodoro (click for recipe).

I followed the recipe, except for the following changes

Jazzed up with homemade croutons (per recipe instructions)!

Oh, and don’t let me forget the Capresse Quesadilla on the side for dipping.

And, in order to win over the heart of my father and brother, who give me weird looks if there is no meat in a meal, I made Garlicky Shrimp.

Ok, I lied.  The Pappa al Pomodoro is not my last meal of the day.  I’m about to head back downstairs and get my usual dessert, which would be an AB&J…Made even better by also eating a date!  You’ll have to use your imagination for this meal because I haven’t made this amazing sandwich yet.  Hence, I dont have a picture to share. And let me just say that I am officially addicted to dates!  It never let my supply get below 3 precious dates, and even that is pushing it!
FYI:  Earth Fare sells the BEST dates in their fruit department.  They are kept in the refrigerator section with the pineapple and kiwi, if you store is set up like mine.

It only takes a little bit to jazz up a meal…or a mood!  Tomorrow, I’m going to do a better job of CONTROLLING my own LIFE!  I plan on making Chocolate Mint Brownies, per the request of my brother.  I am super duper excited and you should be too!!


Capresse Quesadilla
Mozzerealla cheese, basil, tortilla…what’s there not to like!

  • WW tortilla
  • mozzerella cheese
  • basil
  • sun dried tomatoes
  • red onion

Lay your WW tortilla on a flat surface.  On one half, layer the
mozerella cheese, basil, sun dried tomatoes, and red onions.  Fold in
half.  Heat the grittle or stovetop to medium heat, and spray with
cooking spray.  Cook quesadilla, flipping once, until it has reached
your desired crispness.

Garlicky Shrimp
The flavor of this shrimp is very mild.  It pairs well with anyting that has a dominant flavor, sucha as the Pappa Al Pomodoro with which is was served.  They would also be great sliced lengthwise, and placed inside a quessadilla!

Place all the ingredients in a large freezer bag and shake to coat.
 Pour onto a tray and sprinkle with pepper and salt.  Set broiler to HI
and cook for 3 minutes, or until shrimp are cooked through.


Do you ever let people get under your skin and affect your mood?  Some people, usually people I really love, can really affect my emotions and feelings.  Over the past year I have grown up a lot in the sense that I do not let their mood affect me (as much).  Separating my emotions from theirs (especially when they are being negative and critical) is very hard, though, when it involves someone you love.
